Foodie Friday~ Iced Biscuits

Hello there, this week marks the start of 'Foodie Friday,' a weekly project where I'll find and try a recipe! I'm excited to make lots of (hopefully) yummy goodies to eat.

This week I thought I'd start with something simple, Iced biscuits.
 I picked these primarily because I want to make some closer to Christmas to give to friends and family and wondered what such a simple bake would turn out like. Unfortunately I'm a little bit of a hopeless cook and we have the most inconsistent oven but I'm sure I'll learn as I go along!
I got this recipe from a bunch of cookery cards I've had for a while which came in a set called '30 Yummy things to cook and eat'

To make about 14 iced biscuits you will need;
75g (3oz) butter, softened
25g (1oz) icing sugar
115g (4oz) plain flour
white writing icing
6cm (2½in) round cutter
rolling pin
large baking tray, wiped with oil (or 2 smaller ones)
cling film

1. To start off put the butter into a large bowl, then stir it until it is creamy
Then sift in the icing sugar
Stir it in, until the mixture is smooth

2. Sift the flour into the bowl and stir it in with a large spoon
The mixture might look a bit crumbly but that's fine
Use your hands to squeeze the mixture into a dough (this part was pretty fun!)

3. Wrap the dough in some cling film and put it in the fridge for 30 minutes, flatten it a little before you do so
While it chills, heat your oven to 180°C (350°F, gas mark 4)

4. Dust flour onto a clean work surface and also onto a rolling pin
Then, roll out the dough until it is about 5mm (¼in) thick

5. Cut out lots of circles with the cutter, then gather all the scrap edges, roll it out again and cut out lots more yummy biscuits

6. When you've used all the dough, put the circles onto the baking tray (make sure you wipe it with oil first)
Place the tray in the oven and bake the biscuits for 10-12 minutes

6½. Make a tasty cup of tea while you wait

7. Quick, take your biscuits out of the oven!
Leave them on the tray for about 2 minutes
Then lift them onto a wire rack with a spatula and leave them to cool

8. Decorate your biscuits with the writing icing

This is how they turned out! I may have left them in a little too long, haha, 2 of them came out a lot overdone, eep! I don't think I quite rolled the dough even enough, next time I won't give them quite so long and I'll be extra careful in the rolling process. Other than my own issues though, they came out nicely and they taste good too. I also had fun decorating them, I think I'll put a small layer of icing sugar over the whole biscuit next time and then a pattern over the top with the writing icing.

Now to get another cup of tea and enjoy some biscuits
